Inside Text: From the Vine... Oak ageing is determined by the size of the barrel (the smaller the barrel the more rapid the oxidation0 the age of the barrel (the older the barrel the less intense the flavour it imparts) the length of time the wine spends in the barrel (the longer, the more intense the oak flavours) and where the oak was grown (French oak gives vanilla and intense vanilla)
